While I love some of the vegan recipes I've posted, this one holds a special place in my heart because I love the idea of healthy cookies -- if they are healthy vegan cookies -- I'm completely sold!

Of course, these are a treat and not necessarily something you should be having every day. Instead, if you're following the world's best workout programs, you'll know these are perfect for cheat / refuel meals.

This particular recipe will help you make friends for life. So delicious, yet so moist and healthy.

Vegan Chocolate Chip Cookies Recipe

So here is the best vegan chocolate chip cookies recipe that'll win you friends for life!

Ingredients

  • 2/3 cup refined melted coconut oil
  • 2/3 cup vegan granulated sugar
  • 2/3 cup packed vegan brown sugar
  • ½ cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 bag (10 oz) vegan semi-sweet chocolate chips (1 1/2 cups)

Method

  1. Heat the oven to 350°F.
  2. Mix the coconut oil, vegan granulated sugar and vegan brown sugar together.
  3. Stir in the almond milk and vanilla, then flour, baking soda, baking powder and salt until a dough forms.
  4. Stir in the chocolate chips. Take slightly rounded tablespoons of dough and place them 2 inches apart onto ungreased cookie sheets.
  5. Bake 11 to 14 minutes. Make sure the edges are light brown and tops look cooked through.
  6. Cool for 1 minute on cookie sheets.
